It's National Chocolate Souffle Day

Not just any old souffle, chocolate souffle.  I don't think the odds are great that you'll be able to find one at the local market, so be bold, find a recipe and give it a whirl.  Sure, they have a temperamental reputation for collapsing, but even if that happens, it'll probably still taste great.

Stuck for a recipe?   Try this one from Betty Crocker.  OK, it's a chocolate souffle cake, but it'll be less temperamental.
